Description  One of Ammamma’s favorites

Ingredients

  • 1and 1/2 cups semia
  • 1 cup sugar
  • 6 cups milk
  • 1/2 tsp cardamon powder
  • 50g raisins
  • 50g cashewnuts
  • 2 tbsp ghee

Method

  • Heat a little ghee in a vessel
  • Saute the semia in the ghee till it turns light brown. Make sure it does not burn
  • Add the milk and cook on a slow flame for about 20 minutes.
  • add sugar and cook for another 15 minutes.
  • Fry the cashews in the remaining ghee till they are golden brown
  • Turn off the heat and add the raisins to the ghee.
  • Add this to the payasam along with the cardamon powder

Serve it hot or chilled
