A simple spinach preparation that makes a wonderful side with fish, any meats or Dhal.

Secret Tip


2 Lbs of fresh baby spinach, washed and chopped

1 Large onion finely chopped

2 Tbsp Oil (canola, olive or sunflower)

6-8 Garlic cloves peeled and finely sliced

2-3 Green chillies cut in halves

6-10 Karvepaku leaves (Kari Patha)

1/4 Tsp Turmeric

1/4 Tsp Salt (adjust to taste)

1/2 Tsp Jheera

Preparation Method

Add Oil to large Skillet and raise heat to medium high

Add Jheera,  Karvepaku leaves and green chillies and toss for a couple of mins till they are fragrant.

Add garlic and stir fry till it is lightly  browned

Add onions and stir fry for 3-4 mins till they are lightly brown

Add the turmeric and salt to taste

Add the spinach and stir fry for 4-5 mins till the spinach leaves wilt but it is still bright green. Do not overcook. The spinach will start turning brownish in color if overcooked. Adjust the salt to taste.

Take the pan off the heat as soon as the spinach is cooked right and let it cool without a cover . Otherwise it will continue to cook and it will lose that wonderful bright green color.
