Description – Chicken pieces marinated in spices and yoghurt and grilled

Ingredients

For the marinade

  • 1 kg chicken
  • 2 tbsp ginger garlic paste
  • 3 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder
  • 1 cup hung curd ( curd with the whey removed)
  • salt to taste
  • a pinch of red food colour ( optional)
  • 1 tbsp oil
  • Juice of two lemons
For Serving
  • 1 tbsp coriander leaves chopped
  • 1 cup sliced onions
  • few lemon wedges
  • Mint Chutney
Method
  • Wash the chicken pieces well and pat dry
  • Make slits on them with a knife so that they will absorb the masala
  • Make a paste with all the ingredients for the marinade and mix the chicken pieces with it
  • Keep in the refrigerator for at least 6 hours
The chicken can be grilled on a charcoal grill which gives it a very authentic smokey flavour. Alternately it can be grilled on an electric grill or in a saucepan on the stove top
Serve with chopped coriander leaves, sliced onions, lemon wedges and mint chutney.
Variation
The same marinade can be used for fish, paneer or assorted vegetables.
You can cut the chicken into boneless cubes to make chicken tikkas using the same marinade.
