Favourite Sunday morning breakfast

Ingredients

  • Eggs
  • 1 tbsp finely chopped onions
  • 1/2 tsp finely chopped green chillies
  • 1 tsp finely chopped tomatoes
  • 1/4 tsp turmeric powder
  • salt to taste
  • chopped coriander leaves
  • oil
Method
  • Add a little oil in the saucepan and saute the onions, green chillies and tomatoes. Keep aside
  • Take 2 eggs and beat them well adding a little turmeric powder and salt
  • Add the onions, chillies and tomato to the egg and beat again
  • Heat some more oil in the pan and add the egg mixture.
  • Cook on both sides till done.
  • Serve with toasted bread
Variation – You can add some boiled shrimp to the egg mixture. Mushrooms are also an interesting addition.
