A delicious rice dish made with vegetables and basmati rice


  • 2 cups basmati rice
  • 1and 1/2 onions sliced thinly
  • 1and 1/2 cups mixed vegetables cubed ( carrots, beans, potatoes and peas)
  • 4 green chillies slit lengthwise
  • 1 cup tomatoes diced
  • 2 tsp ginger garlic paste
  • 3 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala powder
  • salt to taste
  • 4 tbsp oil
  • 2 tsp cashew paste
  • juice of one lemon
  • 1 tbsp chopped coriander leaves
  • 1 tbsp chopped mint leaves
  • 1 inch piece of cinnamon
  • 1 bay leaf
  • 2 cloves
  • 2 pods cardamom
  • a pinch of methi seedsMethod
  • Soak the methi seeds, cinnamon, cloves and cardamom in a little water
  • Heat the oil in a wide and deep pan
  • Add the soaked methi seeds, cinnamon, cloves and cardamom along with the bay leaf to the oil
  • Add the sliced onions and saute them till they are golden brown
  • Add the ginger garlic paste, turmeric powder, chilli powder, garam masala and salt.
  • Add the cashew paste and saute for some more time
  • Now add the green chillies, coriander and mint leaves.
  • To this add the tomatoes and cook till the masala is well blended and gives out a nice aroma
  • Add the lemon juice
  • Add the mixed vegetables to this and allow them to cook till they are 3/4th done
  • Meanwhile wash the rice and soak it in water for about 10 mins
  • Drain the water completely
  • Add the rice to the masala and saute for a few minutes.
  • Add 4 cups of water to the rice
  • When it starts to boil, reduce the heat and cook covered taking care to see that the steam does not escape from the pan.
  • Cook till the rice is done. The grains should not stick to each other
