Description
A delicious rice dish made with vegetables and basmati rice
Ingredients
- 2 cups basmati rice
- 1and 1/2 onions sliced thinly
- 1and 1/2 cups mixed vegetables cubed ( carrots, beans, potatoes and peas)
- 4 green chillies slit lengthwise
- 1 cup tomatoes diced
- 2 tsp ginger garlic paste
- 3 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
- salt to taste
- 4 tbsp oil
- 2 tsp cashew paste
- juice of one lemon
- 1 tbsp chopped coriander leaves
- 1 tbsp chopped mint leaves
- 1 inch piece of cinnamon
- 1 bay leaf
- 2 cloves
- 2 pods cardamom
- a pinch of methi seedsMethod
- Soak the methi seeds, cinnamon, cloves and cardamom in a little water
- Heat the oil in a wide and deep pan
- Add the soaked methi seeds, cinnamon, cloves and cardamom along with the bay leaf to the oil
- Add the sliced onions and saute them till they are golden brown
- Add the ginger garlic paste, turmeric powder, chilli powder, garam masala and salt.
- Add the cashew paste and saute for some more time
- Now add the green chillies, coriander and mint leaves.
- To this add the tomatoes and cook till the masala is well blended and gives out a nice aroma
- Add the lemon juice
- Add the mixed vegetables to this and allow them to cook till they are 3/4th done
- Meanwhile wash the rice and soak it in water for about 10 mins
- Drain the water completely
- Add the rice to the masala and saute for a few minutes.
- Add 4 cups of water to the rice
- When it starts to boil, reduce the heat and cook covered taking care to see that the steam does not escape from the pan.
- Cook till the rice is done. The grains should not stick to each other
Serve with raitha
