A rice dish prepared with grated fresh coconut

 

Ingredients

  • 4 cups cooked rice
  • 2 cups grated fresh coconut
  • 3-4 red chillies
  • 1/2 tsp mustard seed
  • 1 tbsp channa dhal (optional)
  • a few curry leaves
  • a pinch of hing
  • salt to taste
  • 2 tbsp oil

Method

  • Heat the oil in a kadai and add the mustard seeds, curry leaves, hing and red chillies. You can add the channa dhal and fry it is lightly browned
  • Add the freshly grated coconut to this and saute for about 5 mins
  • To this add the cooked rice and mix well. The rice should be cooled before adding to the coconut
  • Season with salt and let it cook for a couple of minutes.
